Well, with swords you aim for the most damage, right? But with cutting food for cooking, you want to be more precise. Because if all the food is of different sizes, then they won't cook at the same rate and you'll end up with some pieces being burned before others are cooked properly. And some people who cook professionally can get really fast with their cutting skills, but I'm not that good. So I go this speed also to make sure I don't cut myself. Because while you might not mind a little extra blood in your food, I'd be in pain and maybe unable to finish cooking depending on how badly I hurt myself.
